dictionary は一般的な辞書や幅広い語を扱う辞典です。glossary は本や専門分野の後ろなどにある、特定の用語だけを説明する短い用語集を指すことが多いです。

dictionary は数えられる名詞です。1冊・1つなら a dictionary、複数なら dictionaries と言います。

Medieval Latin
dictionarium : 言葉や表現を集めたもの
dictionary は中世ラテン語 dictionarium に由来し、さらに Latin の dictio（言葉、言うこと）と関係があります。英語では、単語を集めて説明する本や資料を表す語になりました。
