the south of ... の形
地域の「南部」を言うときは、ふつう the south of Japan のように the を付けます。一方、方向を表すときは go south のように the を付けないことがあります。

south と southern の違い
south は「南の位置・方向」を直接表し、south side や south entrance のように使います。southern は「南部の、南方の」という広い地域・文化・気候の感じを表し、southern Italy や southern food のように使います。

大文字の South
単なる方角は小文字の south です。アメリカ南部など、特定の地域名として使うときは the South のように大文字になることがあります。
