通常は不可算名詞
terminology はふつう「用語全体」を表す不可算名詞なので、many terminologies より a lot of terminology や many terms の方が自然です。ただし、複数の分野や体系を比べるときは terminologies と複数形になることがあります。

term との違い
term は「1つの用語」、terminology は「ある分野で使われる用語のまとまり」です。例えば technical terms は個々の専門用語、technical terminology は専門用語全体を指します。

jargon との違い
jargon は「専門家だけが使う分かりにくい言葉」という少し批判的な響きがあります。terminology はより中立的で、学習や説明の場面でも使いやすい語です。
