Christmas Eve や New Year's Eve のような祝日名では、固有名詞の一部として Eve を大文字で書くのが普通です。一般的な「前夜」は the eve of ... のように小文字で書きます。

eve は現代英語では主に「特別な日の前夜・前日」を表します。普通に「夕方に会った」と言うなら I met him in the evening. が自然です。
